That was the first thing that attracted Winnie to me, was these cookies. She loved them; she wanted the recipe. It was at the international fair in 7th grade. I didn't like the Filipino food Winnie brought but I liked her outfit. I remember telling my mon that I had to bring in a food of my country -- I didn't understand that. I said "Mom what do we eat?" Lena was the across the street neighbor, a close friend of my parents. She was Greek. She made these Greek Spanish Jewish cookies. Rosquita; little flower.

LENA'S ROSQUITAS

3 eggs
1 egg white (save yolk for tops)
Sugar 1&1/4 cup
Beat together well
then add 2&1/2 heaping tsp baking powder
2/3 cup oil
1/2 tsp vanilla @/or  3 tbsp orange juice
4&1/2 cups flour (keep mixing and adding flour until dry) Hecker's

Put on floured board & Knead dough to soft & dry consistency.
Top w/ egg yolk.

350 degrees on lightly greased pan
20 minutes

Poppy Seed Cake
(Makobuu mopm)

A popular modern version of an old-time poppy seed torte.  The
contributor of this recipe always soaks the poppy seed overnight.  Her
cake is fine-textured and light.

3/4 cup poppy seed
3/4 cup milk
3/4 cup butter
1 1/4 cups sugar
1 teaspoon vanilla
2 cups sifted cake flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
4 egg whites

Pour boiling water over the poppy seed and drain weel over a fine
sieve.  Cover with the milk and soak overnight.

Cream the butter; add the sugar gradually and beat until light.  Stir in
the vanilla and poppy seed; beat well.  Sift the flour with the dry
ingredients 3 times.  Add the flour gradually to the first mixture,
stirring until well blended.  Beat the egg whites until stiff and fold
into the batter.  Spoon into a buttered cake pan.  Bake in a moderate
over (350°F.)  for about 30 minutes, or until done when tested.  Remove
from the pan and place on a cake rack.  Ice with a favorite chocolate
icing.
